The redevelopment of the rural areas around Borgo Mulino a Vento has given rise to new native crops, including olive trees, fig trees, fruit, and vegetables. All the gardens are accessible and available for guests to use, allowing them to observe and participate in the agricultural life of the village. The gardens are managed using sustainable practices, without the use of pesticides, ensuring fresh and genuine ingredients for the restaurant. The planting of around 200 fig trees, divided into four varieties, strengthens the link with the local area: figs, together with olives and vines, have historically supported the local economy, representing a symbol of tradition and resilience.
