The redevelopment of the rural areas around Borgo Mulino a Vento has given rise to new native crops, including olive trees, fig trees, fruit, and vegetables. All the gardens are accessible and available for guests to use, allowing them to observe and participate in the agricultural life of the village. The gardens are managed using sustainable practices, without the use of pesticides, ensuring fresh and genuine ingredients for the restaurant. The planting of around 200 fig trees, divided into four varieties, strengthens the link with the local area: figs, together with olives and vines, have historically supported the local economy, representing a symbol of tradition and resilience. The planting of trees and the creation of seedbeds are part of a project that combines agricultural technique and cultural enhancement, offering guests an authentic and immersive experience of rural life in Salento.

Borgo Mulino a Vento welcomes guests to the tranquillity of the Salento countryside, in Uggiano la Chiesa, just a few minutes from the turquoise waters of Porto Badisco and the magical town of Otranto. The village has been brought to life thanks to the skilful renovation of an ancient rural area, where the 16th-century underground oil mill still tells the story of the land that surrounds it. Here, tradition is not just a memory, but a way of life: natural materials, architectural restoration and environmentally friendly practices define a conscious hospitality that respects and enhances the territory.

The rooms, all with independent entrances, are intimate retreats inspired by the colours of local stone, clear skies and olive groves. Airy spaces, natural light and verandas overlooking the Mediterranean garden create a harmonious dialogue between contemporary comfort and nature. At the centre of the resort, the swimming pool opens up like an oasis surrounded by native plants: a place where time seems to slow down, between refreshing swims, cocktails prepared with local ingredients and sunsets that paint the countryside pink. The restaurant celebrates the richness of Apulian cuisine through zero-kilometre products, often harvested from the resort's own vegetable garden, which produces organic, seasonal crops and a culinary philosophy that values what the land has to offer. The experiences on offer also follow this vision: tours of the oil mill, tastings, excursions and bike rides invite guests to discover Salento at a leisurely pace, with full respect for the surrounding environment.
